Litti Chokha- Bihar wala
Biting into a ghee-soaked litti dipped in moist and crunchy chokha is an experience in itself. Only a Bihari knows how comforting the aroma of fresh baked littis and pungent smell of chokha can be. You host kitty parties, Biharis host litti parties You will rarely find a Bihari who will say no to this dish.
In Bihar, we either make this delicacy at home or enjoy it from a road-side cart. For those who don’t know, littis are dough balls filled with spiced sattu (dried, roasted, finely grounded seed-coated chana dal). When I was in Pune, it was a pain to find the best quality sattu. Shopkeepers always used to get confused between sattu and besan.
For the chokha, tomatoes, potatoes and eggplants are roasted over direct flame and their skins are peeled off before mashing them along with salt, spices, raw mustard oil, diced onions and green chillies.
If you are having this dish in our state, you will be served crispy littis with tangy chokha and a bowl of ghee. You need to pour the ghee inside the litti before dipping it in the chokha. At times, this dish is also served with spicy chicken curry.
